Morgenstern’s in New York has jumped on the dark bandwagon with full gusto and devised a delicious recipe of coconut cream, coconut flakes, and coconut ash. The ash dyes the ice cream jet black and is sourced from burnt coconut husks that have been converted to an activated charcoal. Some say that activated charcoal has health benefits. There are no studies to back this up. Other ice creameries around the world have been using black sesame and/or squid ink to attain the same level of darkness, in case ingesting charcoal isn’t your thing.
